A Simple Dinner
For dinner, we had porkchops paired with upo soup.
I thought of adding it in the menu when I saw this beautiful bottle gourd in the market for only Php 20!
This inspired me to try cooking Sinabawang Upo which I got from Gulay, a recipe booklet from Nestle. I sauteed onions, garlic and ginger in oil, then I added shredded tuyo or dried fish (soaked in water for at least 2 hours prior to shredding). I mixed in 3 cups of cubed upo, poured chicken stock then let it simmer for 5 minutes.
Malunggay leaves were added before I turned off the fire. I used about 3 stalks, but look how much malunggay our kind neighbor gave me.
These are now stored in the refrigerator, but I better use them soon lest they go to waste.
Very simple and very easy, but it’s a cup of steaming goodness, just perfect for the rainy evening.
