I am taking a break right now. I am sipping a hot cup of coffee, surfing the web, and relishing the peace and quiet. Ate and Kuya just left for school and Bunso is sound asleep.
This day started really early for me. I woke up at around 4 in the morning, an hour earlier than usual. Yes, to do some baking.
One of the reasons why I wanted to learn baking was to experience waking up my family to the smell of treats fresh out of the oven. Today is the first time I did just that.

Which was not a really good idea, I realized. I am a newbie baker, so getting all my stuff together, and checking and re-checking the recipe took a really long time. My baking got in the way of our morning routine – breakfast, vitamins, bathroom rituals, getting dressed.
Fortunately not only the kids were able to leave the house on schedule, I was also able to put a muffin each in their lunch bags. Right now though, I am feeling a little bit frazzled, thus the coffee, and the blogging. I think I’ll reserve early morning baking on a school day when I have become pretty good at it. For now, I would have to do that on weekends.
I baked Banana Muffins today. The first batch was good.

I expected the second batch to be a disaster. First, there was not supposed to be a second batch, I guess my muffin pan was too small, and I only had one. I had to wait for the first batch to bake so I could use the pan, thus the leftover batter was sitting on the counter for what I felt was an uncomfortably long time.
When the muffins were finally in the oven, the fire went out. Something went wrong with the gas tank. It was fixed right away, but again the batter was in there a little too long. So now I know that that is one of the perils of a gas oven.
While waiting for them to bake, I washed the dirty utensils, breastfed Bunso, changed his diaper, and took deep breaths. And then I thought, hmm, I had not heard my timer beep for a long time. Sigh, the timer’s batteries went dead. I rushed to the oven and found the sides of the muffins turning brown.
I mentally composed a blog entry about how to ruin muffins. Imagine my surprise when I took a bite of what turned out to be fine muffins.

Yay! I have more than enough to share with my mom whose office is just a few minutes from here.
It was a crazy morning, but I loved it. Now It’s time for me to enjoy my work. I am going to make some more coffee and eat homemade muffins with hubby. I hope your day, though it may have started crazy, will be just as beautiful.

I’m just like you. When I try to learn to cook/bake something, I keep doing it till I get it perfect. Now I’m into making bibingkang malagkit. Ha ha
