There’s No Pancake Like a Homemade Pancake!

I used to buy boxes of the just-add-water-and-egg mix from the supermarket  because hubby likes pancakes. Me? I don’t like these sort of pancakes. I find these mixes too sweet and artificial. I can’t top them anymore with syrup and butter, and how can a pancake be a pancake without syrup and butter?

And since I have been trying to make convenience food from scratch (see my Attempts in the Kitchen), I tried some recipes for homemade pancakes.

The verdict - why oh why have I never thought of this before?!

These are the pancakes my taste buds have been looking for! Homemade goodness, none of the artificial sweetness. Perfect on its own, or with a hefty topping of butter and syrup. And you don’t have to be a whiz in the kitchen to do it.

I have tried a couple of recipes. I’m sharing with you my favorite mix which I got from a cookbook, Lutuing Pilipino ni Aling Charing.

1 1/2 cup flour
2 1/2 tsp baking powder
3 tbsp sugar
1 egg
3/4 cup milk
3/4 tsp salt
3 tbsp shortening

1. Mix  flour, baking powder, sugar and salt.

2. Beat the egg, add milk and shortening, then pour on the flour.

3. Mix all ingredients until you get the desired consistency.

There! Simple and easy, isn’t it?

I’ve read a tip about making a pancake fluffier. You have to leave the batter for at least an hour in the refrigerator. Overnight is better.

I usually prepare the batter after dinner, then I’ll cook them the next day for breakfast. I’m afraid I have forgotten where exactly I have seen the tip, but I’ll add the link here when I’ve found it.

I’ve been  leaving the batter in the refrigerator overnight since I started making homemade pancakes. One time, I was very busy so I made the batter in the morning and cooked them right away. The pancakes turned out ok, but not as fluffy like the ones left in the fridge.

Come on and try making homemade pancakes. I’m sure, like me, you’ll never buy those boxes again.

    Sounds easy enough… My sister used to make them from scratch when I was a kid… I buy the boxed ones. I’m sure this is a hundred times better. Ooh, I like the overnight tip. thanks!

    hay naku. inggit talaga ako sa cooking prowess mo. here i am complaining about the cooking here at home yet i don’t make the effort to cook! haha! tamad lang talaga ako. somehow, i don’t see myself waking up earlier than usual just to cook my own breakfast when we have a cook already (although needs improvement).
    i was thinking when i go on my maternity leave–pero baka by then i’ll be horribly exhausted taking care of the baby that cooking will be the last thing on my mind.

    My kids love this with peanut butter. We have tried a variety of things to put in it, choco chips, M&M’s (que horror!) and even banana toppings :) Yummy!

    Which reminds me of my pancake making days .. when my children were … well .. children (and not the young adults they are now). Alam mo, sa dami nila (six), it is a major production to prepare pancakes. And they eat them quicker than I can make them. And afterwards, talaga tulo pawis ko. So I really do it infrequently. I prefer yung madaling imass produce like champorado, palitaw, ginatan, and lugao. Still … masarap pa ding alalahanin.

    I used to make pancakes from scratch when I was a SAHM. But with the seemingly hectic schedule I already have, my love for cooking has taken the back seat. How I wish I can have all the time in the world to do a chore that I certainly love doing.

    I don’t exactly know the reason why we have to set the batter overnight but it does make the pancake fluffier and I like that. Basti’s not into pancakes that much but I am and I also love it with syrup and whipped butter (and these are the things that has to be stricken off my to-eat list for now…LOL!).

    As always, wonderful post! I’m sure a lot of your followers will enjoy their pancakes better after following your tips. :)

    me, I’ve always patronize the ready hot cake mix and same as you, they really tasted somewhat artificial.

    I make pancakes from scratch, too! I make them in big batches every weekend then I store them in the freezer. Heat and serve during the week for my 6-year old.

    You need to try buttermilk pancakes. You’ll never eat regular pancakes ever again! If you can’t substitute buttermilk for regular milk, just add a teaspoon of vinegar to your regular milk. Try it!!!
