Soup From Leftovers
I woke up this morning with a strong craving for a bowl of hot filling soup for breakfast.
I opened the refrigerator and found leftover corned beef in the freezer, leftover green beans which was a side dish from yesterday’s lunch, and a part of the cabbage I used for nilaga days ago.
Good thing I did not cook all the macaroni when the kids asked for mac and cheese. I sauteed onions and garlic in butter, and then threw in all ingredients I found in the fridge.
Some salt and pepper to taste, and voila! A soup that hit the spot. Made from whatever was there.

That looks like such a comforting soup. It’s something that would remind me of chilly, rainy days of my Baguio childhood. My mom would often make do with leftovers and fresh veggies from the backyard.

It’s in my draft too what my daughter had for breakfast but nothing as creative and spontaneous as this. I still don’t have the confidence to “mix and match” whatever is left in the ref. I’m still a work in progress when it comes to the kitchen. Pero nagmimiswa ako ngayon.

I also prepare macaroni soup with bacon, ham, left over fried chicken which usually hits the spot too.

Wow, this looks good. Tamang-tama sa cold morning weather that we have been experiencing these past few days. I too try some leftover food and make it a new dish. Macaroni with milk and vegetables is one of the kids favorite food.
