This Day’s Menu
Last night, I had a craving for Sinampalukang Manok (Chicken in Tamarind Soup). But I didn’t have all of its ingredients, and oh! I have never ever cooked the dish.
I looked for recipes on the internet and cookbooks, and each one is quite different from the other except for the chicken and the tamarind. This morning, we marched to the market to get some veggies.
So this is what we had for lunch awhile ago - my first Sinampalukang Manok.
I’m afraid this doesn’t look like our grandmothers’ Sinampalukang Manok. This is a hodge podge of all the recipes I studied - one detail here, two over there, and a bit of my own cooking experience.
Some of the recipes had the chicken and the veggies dropped into a casserole of water. I chose to have the chicken sauteed with tomatoes and onions before I added the water from rice wash.
Some recipes do not include ginger, and those were what I followed first. But halfway thru my cooking I realized the soup didn’t have that zing I was craving for. I then added strips of ginger and learned that this is the ingredient that makes Sinampalukang Manok different and special from other tamarind-based soups.
There were various suggestions for veggies, but I picked gabi and mustard leaves from a recipe in a magazine while Raymond wanted radish.
My children kept asking for more, so I’m assuming I did a pretty good job. But I want to improve my Sinampalukan, so if you want to give me any advice, please do.
I just finished boiling some corn on the cob for merienda. We’ve been eating this for several days now but my brood does not get tired of it.
When I was a child, my mom served corn which she got from our backyard. These cobs I got from the market for around PHP8.00 a piece. Sigh, wouldn’t I love a large backyard for planting corn and fruits and vegetables. But all I have is a small patch of land in my backyard so planting corn is not a great idea right now.

goodie! corn! i remember the days when we were still in HS. I would buy the corn dun sa may gate tapos pinalalagyan ko nang isang katerbang butter and salt. yummy!
Masarap talaga ang sinampalukang manok. Kaya lang may allergic reactions ako sa chicken e. Tiis pa ako nang konti.

Iba ba ung sinampalukang manok sa sinigang na manok? heheh iba-ibang variety din kc ginagawa ko para maiba iba ang lasa dahil madalas akong mag sinigang.

I like corn too but not the yellow one. Mas type ko ang white then medyo malagkit.

Mmy Cess, gumagamit ako ng “usbong” (yung bagong tubo na dahon ng sampalok) bihira ring mabili yan sa market, seasonal siya.
simple rin lang ang pagluto ko ng sinampalukang manok.
saute lang yung garlic, onion, ginger, then the chix, add a salt to taste. then add water. pag kumulo, add ko na yung usbong then the veggies (usually sitaw at labanos lang gamit ko). ready to serve na after a couple of minutes. Yung iba nilalagyan pa nila ng sampalok cube pero ako usbong lang talaga, kailangan marami para maasim. hehehe

alam mo ba, kakaluto ko lang ng sinampalukang manok last week. ang secret dyan is maraming-maraming luya… para kahit lagyan mo sya nang lagyan ng tubig hindi magiging matabang yung lasa. saka nilalagyan ko sya ng lara, sitaw at okra! yaaaay… sarap!
